Sixteen years and nine months ago, Fontainebleau Resorts broke ground for the Fontainebleau Las Vegas. The resort sits on a 24.5-acre (9.9 ha) that previously housed the El Rancho Hotel and Casino and the Algiers Hotel. After a VERY long delay, it's finally scheduled to open to the public on December 13, 2023.
A smorgasbord of venues will be available at the 3,644-room resort, including 36 restaurants and bars. You can already make reservations to the following five restaurants ahead of the opening in December.
1. Chyna Club

Enjoy tasty Chinese delights that showcase the complexity and diversity of Chinese flavors. Some meals include crispy duck, steamed dumplings, noodles, and more. Chyna Club will be open on Wednesday, Thursday, and Sunday from 5:30 to 11 pm and Friday and Saturday from 5:30 pm to 2 am.
2. KYU

KYU will serve American barbeque staples with touches of the Japanese discipline of “yakiniku,” a wood-fired grilling technique that adds depth and flavor. It will be open Monday through Sunday from 11 am to 11 pm. The restaurant will also offer stunning views of the Strip.
3. Komodo

After offering authentic Chinese delights in Miami, Komodo will open its third location at the Fontainebleau resort in Vegas. This location will offer a high-energy dining experience with its signature Beijing duck, rotating specials, and a full sushi bar. It will be open Thursday through Monday from 5:30 to 11 pm.
4. La Fontaine

La Fontaine Restaurant will blend French and Italian cuisine in a cozy and elegant atmosphere at Fontainebleau Las Vegas. The restaurant will be open from Thursday to Monday from 7 am to 3 pm for breakfast and brunches.
5. Mother Wolf

Evan Funke's famous Los Angeles restaurant, Mother Wolf, is coming to Las Vegas, bringing its wood-fired pizzas, seasonal antipasti dishes, and handmade pasta. You'll find a variety of Italian wines and art inspired by the Capitoline Wolf. It's open Monday through Sunday from 5:30 to 11 pm.
